Ingredients:
- 4-6 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/3 cup soy sauce
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced or grated
- 1 tablespoon cornstarch (optional, for thickening)
- Pineapple chunks (optional, for serving)
- Cooked rice (for serving)
Instructions:
- Place chicken breasts in the crockpot.
- In a mixing bowl, combine pineapple juice, brown sugar, soy sauce, ketchup, garlic, and ginger. Stir until well combined.
- Pour the sauce mixture over the chicken breasts in the crockpot.
- Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until chicken is tender and cooked through.
- If you’d like the sauce to be thicker, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry. Stir the slurry into the sauce in the crockpot during the last 30 minutes of cooking.
