Hawaiian chicken is a dish inspired by flavors from Hawaii, typically featuring ingredients such as pineapple, soy sauce, and ginger, which are commonly used in Hawaiian cuisine. It often has a sweet and savory flavor profile with a touch of tropical flair.

Ingredients:

  • 4-6 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced or grated
  • 1 tablespoon cornstarch (optional, for thickening)
  • Pineapple chunks (optional, for serving)
  • Cooked rice (for serving)

Instructions:

  1. Place chicken breasts in the crockpot.
  2. In a mixing bowl, combine pineapple juice, brown sugar, soy sauce, ketchup, garlic, and ginger. Stir until well combined.
  3. Pour the sauce mixture over the chicken breasts in the crockpot.
  4. Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until chicken is tender and cooked through.
  5. If you’d like the sauce to be thicker, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry. Stir the slurry into the sauce in the crockpot during the last 30 minutes of cooking.
  6. Once chicken is cooked, shred it with two forks directly in the crockpot and mix it with the sauce.
  7. Serve the shredded chicken and sauce over cooked rice. Optionally, you can top it with pineapple chunks for extra sweetness and tropical flavor.

This dish is packed with flavor and is sure to be a hit at any meal!
