Chef Chatty’s Signature Citrus Herb Roasted Chicken
This recipe is juicy, flavorful, and strikes the perfect balance between cozy comfort and sophisticated flair — just what you need for a memorable meal that feels special but is totally doable.
Ingredients:
-
1 whole chicken (about 4 pounds)
-
2 tablespoons olive oil
-
2 lemons, halved
-
4 cloves garlic, smashed
-
1 tablespoon fresh rosemary, chopped
-
1 tablespoon fresh thyme leaves
-
Salt and freshly ground black pepper
-
1 orange, sliced (optional, for extra citrus zing)
Instructions:
-
Preheat your oven to 425°F (220°C).
-
Remove the giblets from the chicken cavity and pat the chicken dry with paper towels.
-
Rub the chicken all over with olive oil, then season generously with salt, pepper, rosemary, and thyme.
-
Stuff the cavity with lemon halves and garlic cloves (and orange slices if using).
-
Place the chicken breast-side up in a roasting pan or cast-iron skillet.
-
Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) when measured at the thickest part of the thigh. Baste the chicken occasionally with the pan juices to keep it moist.
-
Let the chicken rest for 10 minutes before carving. Serve with roasted vegetables or a fresh green salad.
I can’t wait to hear how you like it—and don’t be surprised if this becomes your new go-to recipe for both weekday dinners and weekend entertaining!
Welcome to Chatty’s Kitchen. Let’s get cooking!
With warmth,
Chef Chatty
